Roast Beef Wrap with Sprouts & Boursin

I willingly admit that I am not a healthy eater, loving my comfort foods, enjoying desserts and craving salty snacks from time to time.  In fact, my first taste of alfalfa sprouts was on a business trip out to California many years ago when I first worked as a technical sales representative for Dow Chemical to the food industry.  I happened to be making a sales call with a Dow salesman and we stopped for a quick sandwich at a health food store, back when health food stores only existed out in California.  There I tasted this delicious combination of a large flour tortilla, spread with an herbal cheese spread, lined with crisp romaine lettuce and topped with rare roast beef, then sprinkled with alfalfa sprouts and rolled tightly before being sliced in half.  Oh wow…I would never have thought to use Boursin cheese as a sandwich spread, and certainly would never have paired it with rare roast beef…but what a wonderful taste combination!   And this was way before anyone knew what a ‘wrap’ was.   Just the taste of that one wrap remained in my memory for decades, and I find myself duplicating this simple concoction and sharing it here with you today.

I hope you enjoy this creation and don’t let the fact that it’s so healthy bother you. According to Dr. Mercola, of the world famous health newsletter:  www.mercola.com:

  • Sprouts can contain up to 100 times more enzymes than raw fruits and vegetables, allowing your body to extract more vitamins, minerals, amino acids and essential fats from the foods you eat
  • The content of vitamins and essential fatty acids increase dramatically during the sprouting process. Depending on the sprout, nutrient content can increase as much as 30 times the original value within just a few days of sprouting, and minerals bind to protein during sprouting, making them more bioavailable.
  • Additionally, the sprouting process deactivates many of the anti-nutrients that are in the seeds
  • Two of the easiest and most efficient ways to optimize your vegetable intake is to juice your vegetables and add sprouted seeds.

So enjoy this simple wrap virtuously in the knowledge that the sprouts are contributing to your good health by strengthening your immune system due to their high intensity of bioavailable nutrients…..or just because you love it!
