This lemon scented mayonnaise is so light and subtle it can be used for fish…particularly salmon, or as a dipping sauce for steamed asparagus.
I keep freshly grated lemon rind in freshly squeezed lemon juice in my freezer just in case I need it for a quick recipe such as this. I freeze them in ice cube trays, then place the frozen juice/rind in zip lock bags or sealed containers. All I have to do is thaw two or three cubes at a time for a recipe.
Ingredients:
- 2/3 cup mayonnaise
- 1 lemon, zested
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Stir all ingredients together, or process briefly in a food processor.
Store in covered container in refrigerator for two weeks.
